  • 8 slices bacon chopped
  • 1/4 cup butter unsalted
  • 4 large Russet potatoes or Yukon Gold potatoes peeled and cubed
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • ⅛ teaspoon ground cayenne pepper
  • ¼ cup all-purpose flour
  • 2 ½ cups low sodium chicken broth or vegetable broth
  • 2 ½ cups whole milk or 2% milk
  • 1 cup shredded sharp cheddar
  • 1 cup shredded white cheddar
  • ½ cup sour cream
  • ¼ cup chopped chives
  • Salt and pepper to taste

Instructions

  2. Step 1: Brown the chopped bacon in a heavy pot. Transfer the bacon to a plate.
  3. Step 2: Add the potatoes and onions to the pot and cook until the onions are tender.
  4. Step 3: Reduce the heat to low and add the garlic and cayenne pepper, cooking for 1 minute. Transfer the vegetables to a plate.
  5. Step 4: Melt butter in the pot. Whisk in the flour and cook for 2 minutes over medium heat.
