A simple and flavorful one-pan meal featuring tender salmon with a bright lemon garlic butter sauce, roasted alongside vegetables.

For the Crust:

  • 4 (6 oz) salmon fillets
  • 1 lb baby potatoes, halved
  • 1 bunch asparagus, trimmed
  • 4 tbsp unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 lemon, juiced and zested
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper.
  2. Toss halved baby potatoes with 1 tbsp melted butter, salt, and pepper. Spread on the sheet pan and roast for 15 minutes.
  3. In a bowl, mix remaining melted butter, minced garlic, lemon juice, zest, oregano, salt, and pepper.
  4. Remove sheet pan from oven. Push potatoes to one side and add salmon fillets and asparagus. Drizzle the lemon garlic butter sauce over everything.
  5. Return to oven and bake for 12-15 minutes, until salmon is cooked through and flakes easily.
  6. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
