- Crust:
- 2 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/2 teaspoon salt
- 1 cup unsalted butter, melted
- Filling:
- 4 large eggs
- 1 1/2 cups light corn syrup
- 1 1/2 cups granulated sugar
- 3 tablespoons unsalted butter, melted
- 1 1/2 teaspoons vanilla extract
- 2 cups pecans, chopped
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a medium bowl, mix together the flour, sugar, and salt for the crust. Stir in the melted butter until combined, then press the mixture evenly into the bottom of the prepared pan.
- Bake the crust for 15 minutes, then remove from the oven and set aside.
- While the crust is baking, whisk together the eggs, corn syrup, sugar, melted butter, and vanilla extract in a large bowl until smooth. Stir in the chopped pecans.
- Pour the filling over the baked crust and spread evenly.
- Bake for an additional 30-35 minutes, or until the filling is set and golden brown.
- Allow the bars to cool completely before cutting into squares.
Notes
For a nuttier flavor, toast the pecans before adding them to the filling. Store leftovers in an airtight container at room temperature for up to 3 days.
