A comforting and flavorful soup that combines all the classic lasagna flavors in a warm, brothy bowl.

For the Crust:

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 (24 oz) jar marinara sauce
  • 6 cups beef broth
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 8 lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups shredded mozzarella cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

1. Prepare the Crust:

  1. Brown ground beef in a large pot over medium heat. Add onion and garlic, cooking until softened.
  2. Stir in marinara sauce, beef broth, oregano, and basil. Bring to a boil.
  3. Add broken lasagna noodles and simmer for 15-20 minutes until noodles are tender.
  4. In a bowl, mix ricotta, Parmesan, and half the mozzarella.
  5. Ladle soup into bowls, top with a dollop of cheese mixture, remaining mozzarella, and fresh basil.

Notes

You can customize the seasonings to taste.
