Easy Ground Beef Enchiladas

A simple and delicious recipe for cheesy ground beef enchiladas with a flavorful red sauce.

For the Crust:

  • 1 lb ground beef
  • 1 small onion, diced
  • 1 packet taco seasoning
  • 1 can (10 oz) red enchilada sauce
  • 8 flour tortillas
  • 2 cups shredded cheddar cheese
  • 1/2 cup sour cream (optional)
  • 2 tbsp chopped fresh cilantro (optional)

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Brown ground beef with onion in a skillet over medium heat. Drain excess fat.
  3. Stir in taco seasoning and 1/4 cup of enchilada sauce. Cook for 2 minutes.
  4. Spread 1/4 cup of enchilada sauce in the bottom of a 9×13 baking dish.
  5. Fill each tortilla with beef mixture and cheese. Roll up and place seam-side down in dish.
  6. Pour remaining sauce over enchiladas and top with remaining cheese.
  7. Bake for 20 minutes until cheese is melted and bubbly.
  8. Garnish with sour cream and cilantro if desired.

Notes

You can customize the seasonings to taste.
