For the Crust:

  • 1 lb boneless, skinless chicken breasts
  • 2 (15 oz) cans white beans, drained and rinsed
  • 1 (15 oz) can corn, drained
  • 1 (4 oz) can diced green chiles
  • 1 (32 oz) box chicken broth
  • 1 (8 oz) block cream cheese, cubed
  • 1 packet taco seasoning
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Place chicken breasts at the bottom of the crockpot.
  2. Add white beans, corn, green chiles, chicken broth, taco seasoning, cumin, and garlic powder. Stir to combine.
  3. Cover and cook on low for 6-7 hours or high for 3-4 hours.
  4. Remove chicken, shred with two forks, and return to crockpot.
  5. Add cubed cream cheese and stir until melted and creamy. Season with salt and pepper.
  6. Serve warm with optional toppings like shredded cheese, sour cream, or tortilla chips.
