Golden, crispy zucchini fritters served with a refreshing lemon yogurt dip. Perfect as an appetizer or light meal.

- 2 medium zucchinis, grated
- 1 teaspoon salt
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg, beaten
- 2 cloves garlic, minced
- 2 tablespoons chopped fresh dill
- 1/4 teaspoon black pepper
- 3 tablespoons olive oil
- 1 cup plain Greek yogurt
- 1 tablespoon lemon juice
- 1 teaspoon lemon zest
- 1/4 teaspoon garlic powder
Instructions
- Grate zucchini and place in a colander. Sprinkle with salt and let sit for 10 minutes to draw out moisture. Squeeze out excess liquid using a clean kitchen towel.
- In a bowl, combine drained zucchini, flour, Parmesan, egg, garlic, dill, and pepper. Mix until well combined.
- Heat olive oil in a large skillet over medium heat. Drop tablespoon-sized portions of the mixture into the skillet, flattening slightly. Cook for 3-4 minutes per side until golden brown and crispy.
- While fritters cook, prepare lemon yogurt by combining Greek yogurt, lemon juice, lemon zest, and garlic powder in a small bowl. Stir until smooth.
- Serve fritters warm with lemon yogurt dip on the side.
