Description

Golden, crispy zucchini fritters served with a refreshing lemon yogurt dip. Perfect as an appetizer or light meal.


Ingredients

  • 2 medium zucchinis, grated
  • 1 teaspoon salt
  • 1/2 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 2 cloves garlic, minced
  • 2 tablespoons chopped fresh dill
  • 1/4 teaspoon black pepper
  • 3 tablespoons olive oil
  • 1 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/4 teaspoon garlic powder

Instructions

  1. Grate zucchini and place in a colander. Sprinkle with salt and let sit for 10 minutes to draw out moisture. Squeeze out excess liquid using a clean kitchen towel.
  2. In a bowl, combine drained zucchini, flour, Parmesan, egg, garlic, dill, and pepper. Mix until well combined.
  3. Heat olive oil in a large skillet over medium heat. Drop tablespoon-sized portions of the mixture into the skillet, flattening slightly. Cook for 3-4 minutes per side until golden brown and crispy.
  4. While fritters cook, prepare lemon yogurt by combining Greek yogurt, lemon juice, lemon zest, and garlic powder in a small bowl. Stir until smooth.
  5. Serve fritters warm with lemon yogurt dip on the side.
