For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1 cup mayonnaise
  • 1 cup grated parmesan cheese
  • 1 cup panko breadcrumbs
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 2 tablespoons fresh parsley, chopped
  • Cooking spray or olive oil

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix mayonnaise, parmesan, garlic powder, paprika, pepper, and salt until well combined.
  3. Pat chicken breasts dry and coat each evenly with the mayonnaise mixture.
  4. Press each chicken breast into panko breadcrumbs, ensuring full coverage on both sides.
  5. Place chicken on the prepared baking sheet, lightly spray or drizzle with oil, and bake for 25-30 minutes until golden and internal temperature reaches 165°F.
  6. Garnish with fresh parsley and let rest for 5 minutes before serving.
