For the Crust:

  • 8 oz pasta of choice
  • 1 cup pumpkin puree
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1/2 tsp ground nutmeg
  • 1/2 tsp dried sage
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  3. Stir in pumpkin puree, heavy cream, nutmeg, and sage. Cook for 3-4 minutes until well combined and heated through.
  4. Add cooked pasta to the skillet and toss to coat evenly with the sauce.
  5. Sprinkle with Parmesan cheese and season with salt and pepper to taste before serving.
