For the Crust:
- 8 oz pasta of choice
- 1 cup pumpkin puree
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1 tbsp olive oil
- 1/2 tsp ground nutmeg
- 1/2 tsp dried sage
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Cook pasta according to package instructions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Stir in pumpkin puree, heavy cream, nutmeg, and sage. Cook for 3-4 minutes until well combined and heated through.
- Add cooked pasta to the skillet and toss to coat evenly with the sauce.
- Sprinkle with Parmesan cheese and season with salt and pepper to taste before serving.
