For the Crust:
- 8 oz fettuccine pasta
- 2 boneless, skinless chicken breasts, sliced
- 2 tbsp olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/4 cup fresh lemon juice
- 1 tsp lemon zest
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- 2 tbsp fresh parsley, chopped
Instructions
1. Prepare the Crust:
- Cook pasta according to package directions; drain and set aside.
- Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat and cook chicken until golden and cooked through, about 6-7 minutes. Remove and set aside.
- In the same skillet, add garlic and sauté for 30 seconds until fragrant. Pour in chicken broth, lemon juice, and lemon zest, scraping up any browned bits.
- Reduce heat to medium-low. Stir in heavy cream and Parmesan cheese until smooth and slightly thickened.
- Return chicken to the skillet, add cooked pasta, and toss to coat. Garnish with fresh parsley before serving.
