Creamy Lemon Chicken Pasta

For the Crust:

  • 8 oz fettuccine pasta
  • 2 boneless, skinless chicken breasts, sliced
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 2 tbsp fresh parsley, chopped

Instructions

1. Prepare the Crust:

  1. Cook pasta according to package directions; drain and set aside.
  2. Season chicken with salt and pepper. In a large skillet, heat olive oil over medium-high heat and cook chicken until golden and cooked through, about 6-7 minutes. Remove and set aside.
  3. In the same skillet, add garlic and sauté for 30 seconds until fragrant. Pour in chicken broth, lemon juice, and lemon zest, scraping up any browned bits.
  4. Reduce heat to medium-low. Stir in heavy cream and Parmesan cheese until smooth and slightly thickened.
  5. Return chicken to the skillet, add cooked pasta, and toss to coat. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
