For the Crust:
- 1 lb butternut squash, peeled and cubed
- 12 oz pasta (such as penne or rigatoni)
- 1 lb Italian sausage, casings removed
- 4 cups fresh spinach
- 1 small onion, diced
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tsp dried sage
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- Preheat oven to 400°F. Toss butternut squash with 1 tbsp olive oil, sage, salt, and pepper. Roast for 25 minutes or until tender.
- Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
- In a large skillet, brown sausage over medium heat, breaking it into crumbles. Remove and set aside.
- In the same skillet, sauté onion until soft. Add garlic and cook for 1 minute.
- Add roasted squash and mash slightly. Stir in cream and Parmesan until smooth.
- Add cooked pasta, sausage, and spinach. Toss until spinach wilts and everything is coated. Use reserved pasta water to adjust consistency if needed.
- Season with salt and pepper to taste. Serve immediately.
