Creamy Butternut Squash Pasta with Sausage and Spinach

For the Crust:

  • 1 lb butternut squash, peeled and cubed
  • 12 oz pasta (such as penne or rigatoni)
  • 1 lb Italian sausage, casings removed
  • 4 cups fresh spinach
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp dried sage
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F. Toss butternut squash with 1 tbsp olive oil, sage, salt, and pepper. Roast for 25 minutes or until tender.
  2. Cook pasta according to package directions. Reserve 1/2 cup pasta water before draining.
  3. In a large skillet, brown sausage over medium heat, breaking it into crumbles. Remove and set aside.
  4. In the same skillet, sauté onion until soft. Add garlic and cook for 1 minute.
  5. Add roasted squash and mash slightly. Stir in cream and Parmesan until smooth.
  6. Add cooked pasta, sausage, and spinach. Toss until spinach wilts and everything is coated. Use reserved pasta water to adjust consistency if needed.
  7. Season with salt and pepper to taste. Serve immediately.

Notes

You can customize the seasonings to taste.
