A hearty and cheesy dip made with ground beef, Rotel tomatoes, and Velveeta cheese, perfect for parties.

- 1 pound ground beef
- 1 can (10 ounces) Rotel diced tomatoes and green chilies
- 1 pound Velveeta cheese, cubed
- 1/2 cup milk
- 1 packet taco seasoning
- 1/2 cup sour cream
- Optional: chopped onions, jalapeños for spice
Instructions
- Brown the ground beef in a skillet over medium heat, then drain excess fat.
- Add taco seasoning to the beef and stir until well combined.
- In a separate pot, melt the Velveeta cheese with milk over low heat, stirring until smooth.
- Combine the seasoned beef, Rotel tomatoes, and cheese mixture in the pot.
- Stir in sour cream and heat through until bubbly.
- Serve warm with tortilla chips.
Notes
For a spicier version, add fresh jalapeños or use hot Rotel. Store leftovers in the refrigerator for up to 3 days.
