- 4 boneless, skinless chicken breasts
- 1/4 cup fresh orange juice
- 2 tbsp lime juice
- 1/4 cup chopped fresh cilantro
- 2 cloves garlic, minced
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tbsp olive oil
- 1 cup white rice
- 1 can black beans, drained and rinsed
- Salt and pepper to taste
Instructions
1. Prepare the Crust:
- In a bowl, whisk together orange juice, lime juice, cilantro, garlic, cumin, paprika, salt, and pepper.
- Add chicken breasts to the marinade, ensuring they are fully coated. Let marinate for at least 30 minutes.
- Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked.
- Meanwhile, cook rice according to package instructions. Stir in black beans and heat through.
- Serve the chicken over the rice and beans, garnished with extra cilantro if desired.
