For the Crust:

  • 4 boneless, skinless chicken breasts
  • 1/4 cup fresh orange juice
  • 2 tbsp lime juice
  • 1/4 cup chopped fresh cilantro
  • 2 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tbsp olive oil
  • 1 cup white rice
  • 1 can black beans, drained and rinsed
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. In a bowl, whisk together orange juice, lime juice, cilantro, garlic, cumin, paprika, salt, and pepper.
  2. Add chicken breasts to the marinade, ensuring they are fully coated. Let marinate for at least 30 minutes.
  3. Heat olive oil in a skillet over medium-high heat. Cook chicken for 6-7 minutes per side until fully cooked.
  4. Meanwhile, cook rice according to package instructions. Stir in black beans and heat through.
  5. Serve the chicken over the rice and beans, garnished with extra cilantro if desired.
