These easy Christmas fruitcake cookies are a delightful twist on traditional fruitcake, packed with candied fruits, nuts, and warm spices, perfect for holiday baking.


Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1 cup candied mixed fruit, chopped
  • 1 cup chopped pecans or walnuts
  • 1/2 cup raisins

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the eggs one at a time.
  4. In another bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the candied fruit, nuts, and raisins.
  7. Drop tablespoon-sized portions of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes, or until the edges are lightly golden.
  9. Allow the cookies to cool on the baking sheets for 5 minutes before transferring to a wire rack to cool completely.

Notes

For best results, store in an airtight container for up to a week. You can substitute different nuts or add a splash of rum for extra flavor.
