  • 500 grams chicken
  • 6 cups water
  • 1 small onion
  • 1 small carrot, chopped
  • 4 to 5 garlic cloves
  • 1 inch ginger
  • 10 to 12 coriander stems
  • 1 tsp black pepper
  • Sweet corn kernels
  • 1 tsp white vinegar
  • 2 tbsp green chili sauce
  • 1 tsp dark soy sauce
  • ½ tsp salt
  • 1 tbsp corn flour
  • 2 tbsp water
  • 2 tbsp cooking oil
  • 4 chopped green chilies
  • 1 tbsp chopped garlic
  • 1 tbsp chopped ginger
  • 2 eggs
  • 1 tbsp chopped spring onion
  • ½ tsp crushed black pepper

Instructions

  1. Preparation:
  2. Heat cooking oil in a pan and add chopped garlic, ginger, and green chilies; sauté until aromatic.
  3. Add finely chopped chicken and stir fry until cooked through.
  4. Pour in 6 cups water, add onion, carrot, coriander stems, and crushed black pepper; bring to a boil.
  5. Cooking:
  6. Add sweet corn kernels to the boiling soup.
  7. Mix corn flour with 2 tbsp water into a slurry and slowly add to the soup while stirring to thicken.
  8. Add white vinegar, green chili sauce, dark soy sauce, and salt; stir gently.
  9. Slowly pour in beaten eggs while stirring continuously to form egg ribbons.
  10. Finishing:
  11. Turn off the heat and garnish the soup with chopped spring onions and additional crushed black pepper as desired.
