Chicken and Broccoli Orzo

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 1 cup orzo pasta
  • 2 cups broccoli florets
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream
  • 2 cups chicken broth
  • 1/2 cup grated Parmesan cheese
  • 1 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large skillet over medium heat. Add chicken and cook until browned, about 5-7 minutes.
  2. Add garlic and thyme, sauté for 1 minute until fragrant. Stir in orzo and cook for another 2 minutes.
  3. Pour in chicken broth and bring to a boil. Reduce heat, cover, and simmer for 10 minutes.
  4. Add broccoli and heavy cream, stirring well. Cover and cook for 5 more minutes or until broccoli is tender.
  5. Remove from heat, stir in Parmesan cheese, and season with salt and pepper. Serve warm.

You can customize the seasonings to taste.
