Description

A simple and vibrant pasta dish featuring sweet cherry tomatoes, garlic, and fresh basil.


Ingredients

  • 12 oz pasta (such as spaghetti or linguine)
  • 2 pints cherry tomatoes, halved
  • 4 cloves garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/2 cup fresh basil leaves, chopped
  • 1/2 tsp red pepper flakes (optional)
  • Salt and black pepper to taste
  • Grated Parmesan cheese for serving

Instructions

  1. Cook pasta according to package directions until al dente. Reserve 1/2 cup pasta water before draining.
  2. While pasta cooks, heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and sauté for 1 minute until fragrant.
  3. Add cherry tomatoes and season with salt and pepper. Cook for 5-7 minutes, until tomatoes soften and release their juices.
  4. Add drained pasta to the skillet along with a splash of reserved pasta water. Toss to combine, adding more pasta water if needed to create a light sauce.
  5. Stir in fresh basil and adjust seasoning. Serve immediately topped with grated Parmesan cheese.
