Cheesy Tortilla Quiche Delight

For the Crust:

  • 2 large flour tortillas
  • 4 large eggs
  • 1 cup shredded cheddar cheese
  • 1/2 cup milk
  • 1/2 cup diced bell peppers
  • 1/4 cup diced onions
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C).
  2. Press one tortilla into a greased pie dish to form the crust. Layer half the cheese on top.
  3. In a bowl, whisk eggs, milk, salt, pepper, and garlic powder. Stir in bell peppers and onions.
  4. Pour the egg mixture over the cheese in the pie dish. Top with the remaining cheese.
  5. Place the second tortilla on top, pressing gently to seal the edges.
  6. Bake for 25-30 minutes or until the center is set and the top is golden brown.
  7. Let cool for 5 minutes before slicing and serving.
