A delicious and easy-to-make quesadilla filled with tender chicken, melted cheese, and flavorful spices.

For the Crust:
- 2 cups cooked chicken, shredded
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup diced bell peppers
- 1/4 cup diced onions
- 1 tsp taco seasoning
- 4 large flour tortillas
- 2 tbsp butter, softened
Instructions
1. Prepare the Crust:
- In a bowl, mix the shredded chicken, cheddar cheese, Monterey Jack cheese, bell peppers, onions, and taco seasoning.
- Spread the chicken and cheese mixture evenly over half of each tortilla.
- Fold the tortillas in half to cover the filling.
- Heat a large skillet over medium heat and lightly butter the outside of each quesadilla.
- Cook each quesadilla for 2-3 minutes per side, or until golden brown and the cheese is melted.
- Remove from the skillet, let cool slightly, then cut into wedges and serve warm.

You can customize the seasonings to taste.
