For the Crust:
- 1 lb boneless, skinless chicken breasts, cubed
- 1 cup white rice, uncooked
- 2 cups broccoli florets
- 1 1/2 cups chicken broth
- 1 cup shredded cheddar cheese
- 1/2 cup heavy cream
- 1 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
1. Prepare the Crust:
- Heat olive oil in a large skillet over medium heat. Add cubed chicken and cook until no longer pink, about 5-6 minutes.
- Add rice, chicken broth, garlic powder, onion powder, salt, and black pepper to the skillet. Stir to combine.
- Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Add broccoli florets and heavy cream, stirring gently. Cover and cook for another 5 minutes or until broccoli is tender.
- Sprinkle shredded cheddar cheese on top, cover, and let it melt for 2 minutes before serving.
