- 1 lb ground beef
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups potatoes, peeled and cubed
- 4 cups beef broth
- 1 cup milk
- 2 cups shredded cheddar cheese
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp chopped fresh parsley
Instructions
- Brown ground beef in a large pot over medium heat. Drain excess fat.
- Add onion and garlic; cook until softened, about 5 minutes.
- Stir in potatoes and beef broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
- Add milk and shredded cheese, stirring until cheese is melted and soup is creamy. Season with paprika, salt, and pepper.
- Garnish with fresh parsley before serving.
