Ingredients

  • 1 lb ground beef
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups potatoes, peeled and cubed
  • 4 cups beef broth
  • 1 cup milk
  • 2 cups shredded cheddar cheese
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp chopped fresh parsley

Instructions

  1. Brown ground beef in a large pot over medium heat. Drain excess fat.
  2. Add onion and garlic; cook until softened, about 5 minutes.
  3. Stir in potatoes and beef broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15 minutes.
  4. Add milk and shredded cheese, stirring until cheese is melted and soup is creamy. Season with paprika, salt, and pepper.
  5. Garnish with fresh parsley before serving.
