For the Crust:
- 1 medium cauliflower, cut into florets
- 1/2 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 2 eggs, beaten
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
Instructions
1. Prepare the Crust:
- Steam or boil cauliflower florets until tender, then drain and mash lightly.
- In a bowl, mix mashed cauliflower, flour, Parmesan, eggs, garlic, salt, and pepper.
- Heat olive oil in a skillet over medium heat.
- Scoop spoonfuls of the mixture into the skillet and flatten slightly.
- Cook for 3-4 minutes per side until golden brown and crispy.
- Drain on paper towels before serving.
