Cauliflower Fried Rice with Crispy Tofu

A healthy and flavorful twist on fried rice using cauliflower rice and crispy tofu for a protein-packed meal.

For the Crust:

  • 1 medium head cauliflower, riced
  • 14 oz extra-firm tofu, pressed and cubed
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 2 cloves garlic, minced
  • 1 tbsp ginger, grated
  • 1 cup mixed vegetables (carrots, peas, bell peppers)
  • 2 eggs, beaten
  • 2 green onions, sliced
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Heat olive oil in a large pan over medium heat. Add tofu cubes and cook until golden and crispy on all sides. Remove and set aside.
  2. In the same pan, add sesame oil, garlic, and ginger. Sauté for 1 minute until fragrant.
  3. Add mixed vegetables and cook for 3-4 minutes until softened.
  4. Push vegetables to one side of the pan and pour beaten eggs into the other side. Scramble until cooked, then mix with vegetables.
  5. Add riced cauliflower and soy sauce. Stir-fry for 5-6 minutes until cauliflower is tender.
  6. Return crispy tofu to the pan and mix well. Season with salt and pepper.
  7. Garnish with sliced green onions before serving.

Notes

You can customize the seasonings to taste.
