For the Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup melted butter
  • 2 (8 oz) packages cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 cup heavy whipping cream
  • 2 medium apples, peeled and diced
  • 2 tbsp butter
  • 1/4 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup caramel sauce
  • Whipped cream for serving

Instructions

1. Prepare the Crust:

  1. Combine graham cracker crumbs and melted butter, press into 9-inch springform pan. Chill for 30 minutes.
  2. Beat cream cheese, sugar, and vanilla until smooth. Whip heavy cream to stiff peaks, then fold into cream cheese mixture. Spread over crust and refrigerate 2 hours.
  3. Sauté apples in butter until tender. Add brown sugar and cinnamon, cook 2 minutes more. Cool completely.
  4. Top chilled cheesecake with apple mixture, drizzle with caramel sauce. Serve with whipped cream.
