For the Crust:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup melted butter
- 2 (8 oz) packages cream cheese, softened
- 1/2 cup granulated sugar
- 1 tsp vanilla extract
- 1 cup heavy whipping cream
- 2 medium apples, peeled and diced
- 2 tbsp butter
- 1/4 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 cup caramel sauce
- Whipped cream for serving
Instructions
1. Prepare the Crust:
- Combine graham cracker crumbs and melted butter, press into 9-inch springform pan. Chill for 30 minutes.
- Beat cream cheese, sugar, and vanilla until smooth. Whip heavy cream to stiff peaks, then fold into cream cheese mixture. Spread over crust and refrigerate 2 hours.
- Sauté apples in butter until tender. Add brown sugar and cinnamon, cook 2 minutes more. Cool completely.
- Top chilled cheesecake with apple mixture, drizzle with caramel sauce. Serve with whipped cream.
