Cajun Cream Cheese Chicken Pasta Bake

For the Crust:

  • 12 oz penne pasta
  • 2 boneless, skinless chicken breasts (cubed)
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • 1 small onion (diced)
  • 3 cloves garlic (minced)
  • 1 red bell pepper (diced)
  • 8 oz cream cheese (softened)
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C). Cook pasta according to package instructions until al dente. Drain and set aside.
  2. Season chicken cubes with Cajun seasoning. Heat olive oil in a large skillet over medium-high heat. Cook chicken until browned and cooked through, about 5-6 minutes. Remove and set aside.
  3. In the same skillet, sauté onion, garlic, and bell pepper until softened, about 3-4 minutes.
  4. Reduce heat to low. Add cream cheese, heavy cream, and chicken broth, stirring until smooth and combined. Season with salt and pepper.
  5. Return chicken to the skillet, then add cooked pasta. Toss until evenly coated.
  6. Transfer mixture to a greased baking dish. Top with mozzarella and Parmesan cheese.
  7. Bake for 15-20 minutes until cheese is melted and bubbly. Broil for 2-3 minutes for a golden top if desired.
