For the Crust:
- 1 large head cauliflower, cut into florets
- 2 tbsp olive oil
- 1/2 cup buffalo sauce
- 8 small flour tortillas
- 1 cup shredded lettuce
- 1/2 cup crumbled blue cheese
- 1/4 cup ranch dressing
- 2 green onions, sliced
Instructions
1. Prepare the Crust:
- Preheat oven to 425°F. Toss cauliflower florets with olive oil and spread on baking sheet. Roast for 20 minutes until tender.
- Transfer roasted cauliflower to bowl, add buffalo sauce, and toss to coat evenly.
- Warm tortillas according to package directions.
- Assemble tacos: place buffalo cauliflower in tortillas, top with shredded lettuce, blue cheese, ranch dressing, and green onions.
