Buffalo Cauliflower Tacos

Spicy roasted cauliflower florets tossed in buffalo sauce, served in warm tortillas with cool and creamy toppings.

For the Crust:

  • 1 large head cauliflower, cut into florets
  • 2 tbsp olive oil
  • 1/2 cup buffalo sauce
  • 8 small flour tortillas
  • 1 cup shredded lettuce
  • 1/2 cup crumbled blue cheese
  • 1/4 cup ranch dressing
  • 2 green onions, sliced

Instructions

1. Prepare the Crust:

  1. Preheat oven to 425°F. Toss cauliflower florets with olive oil and spread on baking sheet. Roast for 20 minutes until tender.
  2. Transfer roasted cauliflower to bowl, add buffalo sauce, and toss to coat evenly.
  3. Warm tortillas according to package directions.
  4. Assemble tacos: place buffalo cauliflower in tortillas, top with shredded lettuce, blue cheese, ranch dressing, and green onions.

Notes

You can customize the seasonings to taste.
