Delicious bite-sized treats with a sweet blueberry filling wrapped in flaky pastry, perfect for snacking or dessert.

For the Crust:

  • 1 package refrigerated pie crusts (2 crusts)
  • 1 cup fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/2 teaspoon vanilla extract
  • 1 egg, beaten (for egg wash)
  • Coarse sugar for sprinkling

Instructions

1. Prepare the Crust:

  1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. In a bowl, mix blueberries, sugar, cornstarch, lemon juice, and vanilla until well combined.
  3. Unroll pie crusts and cut into 3-inch circles using a cookie cutter or glass.
  4. Place a small spoonful of blueberry mixture in the center of each circle.
  5. Fold dough over filling, press edges with a fork to seal, and place on baking sheet.
  6. Brush each bomb with beaten egg and sprinkle with coarse sugar.
  7. Bake for 15-18 minutes until golden brown. Let cool slightly before serving.

Notes

You can customize the seasonings to taste.
