For the Crust:
- 4 boneless, skinless chicken breasts
- 1/2 cup basil pesto
- 1 cup shredded mozzarella cheese
- 1/4 cup grated parmesan cheese
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C). Lightly grease a baking dish with olive oil.
- Season chicken breasts with salt and pepper, then arrange in the baking dish.
- Spread 2 tablespoons of pesto over each chicken breast.
- Top with mozzarella and parmesan cheeses.
- Bake for 25-30 minutes or until chicken reaches 165°F internally.
- Let rest for 5 minutes before serving.
