For the Crust:

  • 1 bunch fresh asparagus, trimmed
  • 4 large eggs
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon paprika
  • 2 tablespoons grated Parmesan cheese

Instructions

1. Prepare the Crust:

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish with olive oil.
  2. Arrange the asparagus in a single layer in the baking dish. Drizzle with olive oil and sprinkle with salt, pepper, garlic powder, and paprika.
  3. Bake for 10 minutes, then remove from oven. Make small wells among the asparagus and crack an egg into each well. Sprinkle with Parmesan cheese.
  4. Return to the oven and bake for another 10-12 minutes, or until the eggs are set to your liking. Serve immediately.
