For the Crust:
- 4 chicken legs (drumsticks and thighs)
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
Instructions
1. Prepare the Crust:
- Preheat oven to 375°F (190°C).
- In a large oven-safe skillet or baking dish, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until softened.
- Add rice to the skillet and stir to coat with oil. Pour in chicken broth and stir to combine.
- Season chicken legs with paprika, thyme, salt, and pepper. Arrange them on top of the rice mixture.
- Cover tightly with foil or a lid and bake for 30 minutes, or until chicken is cooked through and rice is tender.
- Remove from oven and let rest for 5 minutes before serving.
