Apple Cider Vinegar Braised Chicken

For the Crust:

  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 large onion, sliced
  • 2 garlic cloves, minced
  • 2 apples, cored and sliced
  • 1 cup apple cider vinegar
  • 1 cup chicken broth
  • 1 tablespoon honey
  • 1 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Season chicken thighs with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken thighs, skin-side down, and cook until golden brown, about 5 minutes per side. Remove and set aside.
  3. In the same skillet, add onions and garlic. Cook until softened, about 3 minutes.
  4. Add apples, apple cider vinegar, chicken broth, honey, and thyme. Stir to combine.
  5. Return chicken to the skillet, skin-side up. Bring to a simmer, then cover and cook on low heat for 25-30 minutes, or until chicken is cooked through.
  6. Serve hot, spooning the sauce over the chicken.
