- 4 cups mashed potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/4 cup butter, melted
- 4 slices bacon, cooked and crumbled
- 2 green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, mix the mashed potatoes, cheddar cheese, sour cream, and melted butter until well combined.
- Stir in the crumbled bacon and chopped green onions. Season with salt and pepper.
- Transfer the mixture to a greased baking dish.
- Bake for 25-30 minutes until heated through and bubbly on top.
- Let cool for 5 minutes before serving.
Notes
For a crispier top, broil for the last 2 minutes. This casserole can be made ahead and refrigerated overnight before baking.
