For the Crust:
- For the Oats:
- 1/2 cup rolled oats
- 1 tbsp chia seeds
- 1 tbsp cocoa powder
- 1 tbsp maple syrup
- 1/2 cup almond milk
- For the Raspberry Layer:
- 1/4 cup fresh raspberries
- 1 tsp lemon juice
- 1 tsp honey
- For Topping:
- 1 tbsp dark chocolate chips
- 5–6 fresh raspberries
- 1 tsp shredded coconut (optional)
Instructions
1. Prepare the Crust:
- 1. In a mason jar or container, mix oats, chia seeds, cocoa powder, maple syrup, and almond milk until well combined.
- 2. In a small bowl, mash raspberries with lemon juice and honey to create a jam-like consistency.
- 3. Layer the raspberry mixture over the oat base in the jar.
- 4. Seal and refrigerate overnight (or at least 4 hours).
- 5. Before serving, top with dark chocolate chips, fresh raspberries, and coconut if desired.
Notes
For a vegan version, replace honey with agave syrup. Oats stay fresh for up to 3 days refrigerated. Add extra milk if too thick.
