Description

Tender beef bites cooked slowly in a crockpot with garlic butter flavors and hearty potatoes for an easy, comforting meal.


Ingredients

  • 2 pounds beef sirloin, cut into 1-inch bites
  • 1.5 pounds baby potatoes, halved
  • 6 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1/2 cup beef broth

Instructions

  1. In a large bowl, combine beef bites with olive oil, salt, pepper, thyme, and paprika. Toss until evenly coated.
  2. Place the seasoned beef bites at the bottom of the crockpot.
  3. Add the halved baby potatoes on top of the beef.
  4. In a small bowl, mix the minced garlic with melted butter and pour over the beef and potatoes.
  5. Pour beef broth into the crockpot.
  6. Cover and cook on low for 6-8 hours, or until beef is tender and potatoes are soft.
  7. Stir gently before serving to coat everything with the garlic butter sauce.

Notes

For a richer flavor, add fresh herbs like rosemary or parsley at the end. This recipe is perfect for busy days and pairs well with a side salad.
