- 2 pounds beef sirloin, cut into 1-inch bites
- 1.5 pounds baby potatoes, halved
- 6 cloves garlic, minced
- 1/2 cup unsalted butter, melted

- 1 teaspoon dried thyme
- 1 teaspoon paprika
- 1/2 cup beef broth
Instructions
- In a large bowl, combine beef bites with olive oil, salt, pepper, thyme, and paprika. Toss until evenly coated.
- Place the seasoned beef bites at the bottom of the crockpot.
- Add the halved baby potatoes on top of the beef.
- In a small bowl, mix the minced garlic with melted butter and pour over the beef and potatoes.
- Pour beef broth into the crockpot.
- Cover and cook on low for 6-8 hours, or until beef is tender and potatoes are soft.
- Stir gently before serving to coat everything with the garlic butter sauce.
Notes
For a richer flavor, add fresh herbs like rosemary or parsley at the end. This recipe is perfect for busy days and pairs well with a side salad.
