Description

A hearty and creamy soup made with ground beef, potatoes, and vegetables in a slow cooker.


Ingredients

  • 1 pound ground beef
  • 4 cups potatoes, peeled and diced
  • 1 cup carrots, sliced
  • 1 cup celery, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon dried thyme
  • 1 cup shredded cheddar cheese
  • Optional: 1/2 cup sour cream for topping

Instructions

  1. Brown the ground beef in a skillet over medium heat until fully cooked; drain excess fat.
  2. Add the browned ground beef, diced potatoes, sliced carrots, chopped celery, diced onion, and minced garlic to the crockpot.
  3. Pour in the chicken broth and stir in the cream of chicken soup, milk, salt, black pepper, and dried thyme.
  4. Cover and cook on low for 6-8 hours or until vegetables are tender.
  5. Stir in the shredded cheddar cheese until melted. Serve hot, optionally topped with sour cream.

Notes

For a thicker soup, mash some potatoes before serving. Store leftovers in the refrigerator for up to 3 days.
