A hearty and creamy soup made with ground beef, potatoes, and vegetables in a slow cooker.

- 1 pound ground beef
- 4 cups potatoes, peeled and diced
- 1 cup carrots, sliced
- 1 cup celery, chopped
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (10.5 oz) cream of chicken soup
- 1 cup milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon dried thyme
- 1 cup shredded cheddar cheese
- Optional: 1/2 cup sour cream for topping
Instructions
- Brown the ground beef in a skillet over medium heat until fully cooked; drain excess fat.
- Add the browned ground beef, diced potatoes, sliced carrots, chopped celery, diced onion, and minced garlic to the crockpot.
- Pour in the chicken broth and stir in the cream of chicken soup, milk, salt, black pepper, and dried thyme.
- Cover and cook on low for 6-8 hours or until vegetables are tender.
- Stir in the shredded cheddar cheese until melted. Serve hot, optionally topped with sour cream.
Notes
For a thicker soup, mash some potatoes before serving. Store leftovers in the refrigerator for up to 3 days.
