- 2 pounds Yukon Gold potatoes, washed and cubed
- 1/4 cup olive oil
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, toss the cubed potatoes with olive oil, minced garlic, dried thyme, salt, and black pepper until evenly coated.
- Spread the potatoes in a single layer on the prepared baking sheet.
- Roast in the preheated oven for 30-40 minutes, stirring halfway through, until golden and crispy.
- Remove from the oven and immediately sprinkle with grated Parmesan cheese, tossing to coat.
- Let cool for a few minutes before serving.
Notes
For extra crispiness, make sure the potatoes are completely dry before coating. You can add fresh herbs like rosemary for additional flavor.
