Description

These crispy parmesan roasted potatoes are golden and crunchy on the outside with a fluffy interior, flavored with garlic and herbs.


Ingredients

  • 2 pounds Yukon Gold potatoes, washed and cubed
  • 1/4 cup olive oil
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, toss the cubed potatoes with olive oil, minced garlic, dried thyme, salt, and black pepper until evenly coated.
  3. Spread the potatoes in a single layer on the prepared baking sheet.
  4. Roast in the preheated oven for 30-40 minutes, stirring halfway through, until golden and crispy.
  5. Remove from the oven and immediately sprinkle with grated Parmesan cheese, tossing to coat.
  6. Let cool for a few minutes before serving.

Notes

For extra crispiness, make sure the potatoes are completely dry before coating. You can add fresh herbs like rosemary for additional flavor.
