For the Chicken:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1/4 cup all-purpose flour
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 2 large eggs, beaten
  • 2 tbsp olive oil

For the Garlic Sauce:

  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • 1/2 tsp red pepper flakes (optional for a kick)
  • 1/2 cup heavy cream
  • 1/2 cup chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1 tbsp chopped fresh parsley (for garnish)
  • Salt and pepper to taste

Instructions

1. Prepare the Chicken:

  1. Preheat oven to 400°F (200°C).
  2. In a shallow bowl, combine Parmesan cheese, panko breadcrumbs, flour, salt, pepper, garlic powder, and Italian seasoning.
  3. In another shallow bowl, beat the eggs.
  4. Dip each chicken breast into the egg mixture, then coat with the Parmesan breadcrumb mixture, pressing lightly to adhere.

2. Cook the Chicken:

  1. Heat olive oil in a large oven-safe skillet over medium-high heat.
  2. Add the coated chicken breasts and cook for 4-5 minutes per side, until golden and crispy.
  3. Transfer the skillet to the preheated oven and bake for an additional 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

3. Make the Garlic Sauce:

  1. While the chicken is baking, melt butter in a separate skillet over medium heat.
  2. Add minced garlic and red pepper flakes, and sauté for 1-2 minutes until fragrant.
  3. Stir in heavy cream, chicken broth, and Parmesan cheese, and bring to a simmer.
  4. Let the sauce cook for 3-5 minutes, until it thickens. Season with salt and pepper to taste.

4. Serve & Enjoy:

 

  1. Once the chicken is done, spoon the garlic sauce over the crispy chicken breasts.
  2. Garnish with fresh parsley and serve with your favorite side dish, such as mashed potatoes, pasta, or steamed vegetables.
