Description

These crispy mashed potato cheese bites are a delightful appetizer featuring creamy mashed potatoes and gooey cheese, fried to perfection for a crunchy exterior and soft interior.


Ingredients

  • 4 cups mashed potatoes (from about 6 medium potatoes)
  • 1 cup shredded cheddar cheese
  • 1/2 cup breadcrumbs
  • 1/4 cup chopped green onions
  • 1 large egg, beaten
  • Salt and pepper, to taste
  • 1/2 cup all-purpose flour
  • Vegetable oil, for frying

Instructions

  1. In a large bowl, combine the mashed potatoes, shredded cheddar cheese, breadcrumbs, chopped green onions, beaten egg, salt, and pepper. Mix until well incorporated.
  2. Form the mixture into small bite-sized balls or patties, about 1-2 inches in diameter.
  3. Lightly dredge each bite in flour to coat evenly.
  4. Heat vegetable oil in a deep fryer or large skillet to 350°F (175°C).
  5. Fry the potato bites in batches for 2-3 minutes per side, or until golden brown and crispy.
  6. Remove from oil and drain on paper towels. Serve hot with your favorite dipping sauce.

Notes

Make sure the mashed potatoes are cool before mixing to prevent the cheese from melting prematurely. For extra crispiness, chill the formed bites in the refrigerator for 30 minutes before frying.
