Description

A creamy and flavorful soup made with fresh tomatoes, basil, and cream.


Ingredients

  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • 2 pounds ripe tomatoes, chopped
  • 1 cup fresh basil leaves
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and garlic, sauté until softened, about 5 minutes.
  3. Add chopped tomatoes and basil, cook for 10 minutes.
  4. Pour in vegetable broth and bring to a boil, then simmer for 15 minutes.
  5. Blend the mixture until smooth using an immersion blender.
  6. Stir in heavy cream, season with salt and pepper, and heat through.

Notes

For a vegan version, substitute heavy cream with coconut milk.
