Description
A creamy and flavorful soup made with fresh tomatoes, basil, and cream.
Ingredients

- 2 tablespoons olive oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 2 pounds ripe tomatoes, chopped
- 1 cup fresh basil leaves
- 2 cups vegetable broth
- 1 cup heavy cream
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onion and garlic, sauté until softened, about 5 minutes.
- Add chopped tomatoes and basil, cook for 10 minutes.
- Pour in vegetable broth and bring to a boil, then simmer for 15 minutes.
- Blend the mixture until smooth using an immersion blender.
- Stir in heavy cream, season with salt and pepper, and heat through.
Notes
For a vegan version, substitute heavy cream with coconut milk.
