- 4 boneless chicken breasts
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup fresh basil, chopped
- 1 cup heavy cream
- 2 garlic cloves, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium heat and cook chicken for 5-7 minutes per side until golden.
- Remove chicken and set aside; in the same skillet, add garlic and sun-dried tomatoes, sauté for 2 minutes.
- Stir in heavy cream and basil, bring to a simmer.
- Return chicken to the skillet and cook for another 5 minutes until sauce thickens and chicken is cooked through.
- Serve immediately.
Notes
For a lighter version, substitute heavy cream with half-and-half. Pairs well with pasta or vegetables.
