For the Crust:

  • 1 lb potato gnocchi
  • 2 tbsp olive oil
  • 8 oz mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 cups fresh spinach
  • 1 cup heavy cream
  • 1/2 cup grated parmesan cheese
  • 1/4 tsp nutmeg
  • Salt and pepper to taste

Instructions

1. Prepare the Crust:

  1. Cook the gnocchi according to package instructions, then drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Add mushrooms and sauté until golden, about 5 minutes.
  3. Add garlic and spinach to the skillet, cooking until spinach wilts, about 2 minutes.
  4. Pour in heavy cream, parmesan, and nutmeg. Stir until the sauce thickens slightly.
  5. Add the cooked gnocchi to the skillet and toss to coat evenly. Season with salt and pepper.
  6. Serve warm with extra parmesan if desired.

Notes

You can customize the seasonings to taste.
