This creamy macaroni salad is a classic side dish featuring pasta mixed with mayonnaise-based dressing and fresh vegetables.

- 8 ounces uncooked elbow macaroni
- 3/4 cup mayonnaise
- 2 tablespoons distilled white vinegar
- 1 teaspoon white sugar
- 1 teaspoon salt
- 1/4 teaspoon ground black pepper
- 1/2 cup chopped celery
- 1/2 cup chopped red bell pepper
- 1/2 cup chopped green onions
Instructions
- Bring a large pot of lightly salted water to a boil. Add macaroni and cook until tender, about 8 minutes. Rinse under cold water and drain.
- In a large bowl, mix together the mayonnaise, vinegar, sugar, salt, and pepper.
- Stir in the celery, bell pepper, and green onions. Add the macaroni and mix well.
- Cover and chill in the refrigerator for at least 1 hour before serving.
Notes
For a tangier flavor, increase the vinegar to taste.
