Description

This creamy macaroni salad is a classic side dish featuring pasta mixed with mayonnaise-based dressing and fresh vegetables.


Ingredients

  • 8 ounces uncooked elbow macaroni
  • 3/4 cup mayonnaise
  • 2 tablespoons distilled white vinegar
  • 1 teaspoon white sugar
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/2 cup chopped celery
  • 1/2 cup chopped red bell pepper
  • 1/2 cup chopped green onions

Instructions

  1. Bring a large pot of lightly salted water to a boil. Add macaroni and cook until tender, about 8 minutes. Rinse under cold water and drain.
  2. In a large bowl, mix together the mayonnaise, vinegar, sugar, salt, and pepper.
  3. Stir in the celery, bell pepper, and green onions. Add the macaroni and mix well.
  4. Cover and chill in the refrigerator for at least 1 hour before serving.

Notes

For a tangier flavor, increase the vinegar to taste.
