- 2 tablespoons olive oil
- 6 boneless, skinless chicken thighs
- Salt and pepper, to taste
- 1/4 cup unsalted butter
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 cup Parmesan cheese, grated
- 1/4 teaspoon Italian seasoning
- Fresh parsley, chopped (for garnish)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Season the chicken thighs with salt and pepper on both sides.
- Cook the chicken for 6-7 minutes per side, or until golden brown and cooked through. Remove from skillet and set aside.
- In the same skillet, melt the butter over medium heat.
- Add minced garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and chicken broth, stirring to combine.
- Bring to a simmer and cook for 2-3 minutes until slightly thickened.
- Stir in Parmesan cheese and Italian seasoning until melted and smooth.
- Return the chicken to the skillet and spoon the sauce over it.
- Cook for an additional 2 minutes to heat through.
- Garnish with fresh parsley before serving.
Notes
Serve with pasta or rice to soak up the sauce. Leftovers can be stored in the fridge for up to 2 days.
