A spicy and creamy pasta dish featuring tender Cajun-spiced chicken and rotini pasta tossed in a rich garlic mozzarella sauce.

For the Crust:

  • 1 lb boneless, skinless chicken breasts, cubed
  • 2 tbsp Cajun seasoning
  • 12 oz rotini pasta
  • 3 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

1. Prepare the Crust:

  1. Season chicken cubes with Cajun seasoning. Heat 2 tbsp olive oil in a large skillet over medium-high heat. Cook chicken until browned and cooked through, about 6-8 minutes. Remove and set aside.
  2. Cook rotini according to package directions until al dente. Drain and set aside.
  3. In the same skillet, heat remaining 1 tbsp olive oil. Add minced garlic and sauté for 1 minute until fragrant. Pour in heavy cream and bring to a simmer.
  4. Reduce heat to low. Stir in mozzarella and Parmesan cheeses until melted and smooth. Season sauce with salt and pepper.
  5. Add cooked chicken and pasta to the skillet. Toss until evenly coated with the sauce. Garnish with fresh parsley before serving.

Notes

You can customize the seasonings to taste.
