  • 2 tablespoons olive oil
  • 1 pound potato gnocchi
  • 1/2 pound Italian sausage, casing removed
  • 2 cups butternut squash, peeled and cubed
  • 1 small onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1/2 teaspoon dried sage
  • Salt and black pepper to taste
  • 1/4 cup grated Parmesan cheese
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add gnocchi and cook until golden brown, about 5-7 minutes; remove and set aside.
  3. In the same skillet, add sausage and cook until browned, breaking it up with a spoon.
  4. Add butternut squash, onion, and garlic; cook until squash is tender, about 10 minutes.
  5. Stir in heavy cream, chicken broth, and sage; bring to a simmer.
  6. Return gnocchi to the skillet and toss to coat in the sauce.
  7. Season with salt and pepper, then stir in Parmesan cheese until melted.
  8. Garnish with fresh parsley and serve immediately.
