- 1 pound potato gnocchi
- 1/2 pound Italian sausage, casing removed
- 2 cups butternut squash, peeled and cubed
- 1 small onion, finely chopped
- 3 garlic cloves, minced
- 1 cup heavy cream
- 1/2 cup chicken broth
- 1/2 teaspoon dried sage
- Salt and black pepper to taste
- 1/4 cup grated Parmesan cheese
- Fresh parsley for garnish
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add gnocchi and cook until golden brown, about 5-7 minutes; remove and set aside.
- In the same skillet, add sausage and cook until browned, breaking it up with a spoon.
- Add butternut squash, onion, and garlic; cook until squash is tender, about 10 minutes.
- Stir in heavy cream, chicken broth, and sage; bring to a simmer.
- Return gnocchi to the skillet and toss to coat in the sauce.
- Season with salt and pepper, then stir in Parmesan cheese until melted.
- Garnish with fresh parsley and serve immediately.
