Ingredients

  • 1 cup uncooked white rice
  • 2 cups water
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 pound boneless chicken breasts, cubed
  • 1 cup sliced mushrooms
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup chicken broth

Instructions

  1. Cook the rice according to package instructions using the 2 cups of water; set aside.
  2. In a large skillet, heat oil over medium heat and add cubed chicken, cooking until browned on all sides.
  3. Add chopped onion, minced garlic, and sliced mushrooms to the skillet; sauté until vegetables are tender.
  4. Stir in the cream of mushroom soup and chicken broth; bring to a simmer and cook for 10 minutes.
  5. Mix the cooked rice into the skillet with the chicken mixture; stir well and heat through for another 5 minutes.
  6. Season with salt and pepper to taste, then serve hot.
