Description

Delicious cupcakes combining tart cranberries, zesty orange, and sweet white chocolate for a festive treat.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon orange zest
  • 1/2 cup fresh orange juice
  • 1 teaspoon vanilla extract
  • 1 cup fresh cranberries
  • 1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a large bowl, cream butter and sugar until light and fluffy.
  4. Add eggs one at a time, beating well after each addition.
  5. Stir in orange zest, orange juice, and vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  7. Fold in cranberries and white chocolate chips.
  8. Divide batter evenly among the cupcake liners.
  9. Bake for 18-22 minutes or until a toothpick inserted comes out clean.
  10. Allow to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For a festive touch, top with orange glaze or white chocolate frosting. Store in an airtight container for up to 3 days.
