- 1 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 tablespoon orange zest
- 1/2 cup fresh orange juice
- 1 cup fresh cranberries, chopped
- 1/2 cup white chocolate chips
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a medium bowl, whisk together flour, baking powder, baking soda, and salt.
- In a large bowl, cream together sugar and butter until light and fluffy.
- Add eggs one at a time, beating well after each addition. Stir in vanilla and orange zest.
- Alternately add flour mixture and orange juice to the butter mixture, beginning and ending with flour.
- Fold in cranberries and white chocolate chips.
- Divide batter evenly among cupcake liners and bake for 20-25 minutes or until a toothpick inserted comes out clean.
- Cool completely on a wire rack before frosting.
Notes
For a richer flavor, use dark chocolate chips as a substitute. Store in an airtight container for up to 3 days.
