A creamy, cheesy casserole made with corn, bacon, and cheese that’s highly addictive and perfect for family gatherings.

- 6 slices of bacon, cooked and crumbled
- 2 cans (15 oz each) of whole kernel corn, drained
- 1 cup of sour cream
- 1 cup of shredded cheddar cheese
- 1/2 cup of mayonnaise
- 1 packet (1 oz) of ranch dressing mix
- 1 cup of crushed Ritz crackers
- 1/4 cup of melted butter
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
- In a large bowl, mix together the corn, sour cream, cheddar cheese, mayonnaise, and ranch dressing mix until well combined.
- Stir in the crumbled bacon.
- Spread the mixture evenly into the prepared baking dish.
- In a small bowl, combine the crushed Ritz crackers and melted butter; sprinkle this over the top of the casserole.
- Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
- Let it cool for 5 minutes before serving.
Notes
This dish is best served hot and can be stored in the refrigerator for up to 3 days. For a spicier version, add diced jalapeños.
