Description

A creamy, cheesy casserole made with corn, bacon, and cheese that’s highly addictive and perfect for family gatherings.


Ingredients

  • 6 slices of bacon, cooked and crumbled
  • 2 cans (15 oz each) of whole kernel corn, drained
  • 1 cup of sour cream
  • 1 cup of shredded cheddar cheese
  • 1/2 cup of mayonnaise
  • 1 packet (1 oz) of ranch dressing mix
  • 1 cup of crushed Ritz crackers
  • 1/4 cup of melted butter

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a large bowl, mix together the corn, sour cream, cheddar cheese, mayonnaise, and ranch dressing mix until well combined.
  3. Stir in the crumbled bacon.
  4. Spread the mixture evenly into the prepared baking dish.
  5. In a small bowl, combine the crushed Ritz crackers and melted butter; sprinkle this over the top of the casserole.
  6. Bake in the preheated oven for 25-30 minutes, or until the top is golden and bubbly.
  7. Let it cool for 5 minutes before serving.

Notes

This dish is best served hot and can be stored in the refrigerator for up to 3 days. For a spicier version, add diced jalapeños.
