- For the Soup:
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 4 cups chicken broth
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 tbsp butter
- For the Dumplings:
- 1 cup all-purpose flour
- 1 1/2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 2 tbsp melted butter
Instructions
- 1. In a large pot, melt butter over medium heat. Add onion, carrots, celery, and garlic. Sauté until softened, about 5 minutes.
- 2. Add chicken pieces, thyme, salt, and pepper. Cook until chicken is browned, about 5 minutes.
- 3. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
- 4. Meanwhile, prepare dumplings: In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until just combined.
- 5. Drop spoonfuls of dumpling batter into the simmering soup. Cover and cook for 10-12 minutes, until dumplings are cooked through.
- 6. Serve hot.
Notes
For extra flavor, add fresh parsley on top. Dumplings can be made ahead and refrigerated.
