Description

A warm and comforting soup filled with tender chicken, fluffy dumplings, and fresh vegetables, perfect for a chilly day.


Ingredients

  • For the Soup:
  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 4 cups chicken broth
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 tbsp butter
  • For the Dumplings:
  • 1 cup all-purpose flour
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 2 tbsp melted butter

Instructions

  1. 1. In a large pot, melt butter over medium heat. Add onion, carrots, celery, and garlic. Sauté until softened, about 5 minutes.
  2. 2. Add chicken pieces, thyme, salt, and pepper. Cook until chicken is browned, about 5 minutes.
  3. 3. Pour in chicken broth and bring to a boil. Reduce heat and simmer for 15 minutes.
  4. 4. Meanwhile, prepare dumplings: In a bowl, mix flour, baking powder, and salt. Stir in milk and melted butter until just combined.
  5. 5. Drop spoonfuls of dumpling batter into the simmering soup. Cover and cook for 10-12 minutes, until dumplings are cooked through.
  6. 6. Serve hot.

Notes

For extra flavor, add fresh parsley on top. Dumplings can be made ahead and refrigerated.
